WHAT IS BOTTARGA?
Centuries ago, Phoenicians anglers were the first to discover the flavor of the grey mullet roe. They were the ones who developed the product that it´s known today as Bottarga by the European and as Karasumi by the Asian.
Known in Europe as the Mediterranean Caviar, Bottarga Gold is produced from the grey mullet roe fished in the sea of Santa Catarina. This fish, that can only be captured between the months of May and June, has an extremely high nutritional value and its golden colored roe, is transformed in Bottarga from a natural and artisanal procedure.
The grey mullet fishing has been controlled by the government these last years in order to preserve the species.
