De Transmontanus is oorspronkelijk afkomstig uit Noord-Amerika, maar is geïntroduceerd in Europa vanwege zijn snelle groei, tolerantie voor verschillende omstandigheden, en hoge kaviaaropbrengst. De kaviaar van de Transmontanus staat bekend om zijn grote, glanzende eitjes met een delicate smaak. Het duurt 14-15 jaar voordat de vissen rijp zijn voor kaviaarproductie.
