Caviar, the unfertilized eggs of the female sturgeon, is an expensive and famous delicacy. The classic caviar originally came from Iran or Russia. The main sturgeon species for caviar are Beluga sturgeon, Sevruga, Oscetra and Kaluga. In Russia in particular, caviar was a delicacy for all walks of life. Due to overfishing, water pollution and poaching, the sturgeon has been highly endangered since the late 1990s. The prices of caviar reached exorbitant heights due to the enormous scarcity and also became unaffordable for the 'common' man in Russia. During that time, people started to think about making an acceptable alternative.
