These sturgeon loin pieces (Acipenser Baerii sturgeon fillet) come from specimens that are just over a year old, bred in Spain and meet the highest quality standards. They are soft and tasty and are a real delicacy.
The flesh has a unique texture, exceptionally soft and fine, excellent and surprisingly deep flavor.
It is an excellent source of protein, phosphorus and omega 3 fatty acids and highly appreciated in haute cuisine for the versatility of its finely veined meat.
