BOTTARGA DI MUGGINE (Grey Mullet Roe)
Bottarga di Muggine is a classic of Italian cuisine. The mullet roe is salted, pressed, sun-dried and then coated with a thin layer of wax.
In Italy, bottarga is also known as ‘Sardinian caviar’. In terms of flavour, Bottarga di Muggine is characterised by a very savoury, almost smoky taste, strongly reminiscent of fresh fish.
In Italy, bottarga is usually grated over pasta or eaten in thin slices as a starter with tomatoes, olive oil and lemon. In France, bottarga (poutargue) is eaten as a topping on toast or served as a starter with olive oil, lemon juice and pepper.
